A single serving finger food dessert, is easy to assemble on a gluten free cracker.

Although the cause is unknown, celiac disease (an immune reaction to eating the protein gluten) is four times more common than it was 60 years ago. May is celiac awareness month, an annual event supported by the National Foundation for Celiac Awareness. It’s fitting that Dare Foods, in recognition of Celiac Awareness, is sponsoring a recipe contest challenging the Recipe Reduxers to create tempting gluten free recipes using one of two delicious gluten free cracker varieties: Breton Gluten Free Original with Flax and Breton Gluten Free Herb and Garlic.
With a background in clinical nutrition, I ‘m accustomed to providing medical nutritional management for individuals with a myriad of health conditions requiring food modifications (diet altered to include or exclude certain components). Yes, I have seen a dramatic increase in the number of gluten free meal plans since I first began my nutrition career! In addition to educating my patients, I find it equally important to expand their culinary knowledge to include ways to deliciously prepare meals/snacks tailored to both their health needs and their discriminating tastes. But that’s not all. . . it’s necessary to incorporate foods that the entire family will enjoy, because nobody dines alone!
That’s why I love the two Breton gluten free cracker varieties. They have a tender-crisp texture and a wholesome flavor that’s appealing to all palates. Made with arrowroot flour and green lentil flour, free of artifical flavors and colors, they are so tasty you’ll find it hard to believe they are gluten free!
Today I am showcasing the Breton Gluten Free Cracker with Flax in a delicious and easy to make finger food dessert. Inspired by a decadent dulce de leche banana cream pie, I created a single serving version, gluten free of course. This sweet, single sized dessert is undeniably adorable, fun to eat, easy to serve and gives everyone a perfect portion. I assembled this batch for my family, arranged them on a vintage serving tray, and watched them dissappear. Proof they are down right delectable! - 1 box Breton Gluten Free Original crackers with Flax (4.76 oz.)
- 1 can Dulce de Leche (13.4 oz)
- 3 Bananas, sliced
- 3 oz. dark chocolate (72% cocoa)
- 1/3 cup heavy cream
- 1/2 cup salted peanuts, chopped
1. Warm 1/3 cup cream in a saucepan over low heat until hot but not boiling. Remove from heat. Break chocolate into pieces and stir into warm cream. Allow to melt, about 3 minutes. Stir until smooth; let cool.
2. Meanwhile place crackers, in a single layer, on a tray or platter.
3. Spread each cracker with about 2 teaspoons dulce de leche.
4. Add a slice of banana to each cracker.
5. Drizzle with chocolate sauce.
6. Top with chopped peanuts. Enjoy.
