Fireworks. Parades. Cookouts. Pie eating contests. What Fourth of July tradition are you most looking forward to? This year I am coveting our neighborhood pie eating contest! Ok, so I can’t fool you; it’s a cookout! I love the foods associated with cooking outdoors, but with health guidelines encouraging us to consume less saturated fat and less red meat, I too need to rethink what I toss on the grill. Lately, I have been experimenting with 93% lean ground turkey. The lower fat level in this meat has health benefits but, if not prepared properly it can be as tough as shoe leather! In my post today I am sharing a recipe for a moist turkey burger so you can reap the health benefits of this burger without sacrificing taste!
The key to a good turkey burger is to add moisture before you cook. When I prepared these, I purposely avoided making anything too funky … I had guests (my son + 3 of his friends from the University of Missouri). The resulting burger was one that tasted good topped with the classics: lettuce, tomato, onion and spicy brown mustard. The moisture boosting ingredients I added were Dijon mustard and a whole egg. Other options include mixing in one of the following for each pound of ground turkey: 2 egg whites, 2 tablespoons of non-fat Greek yogurt, 2 Tablespoons of Worcestershire sauce, 2 tablespoons of chunky applesauce or chutney. YUM!

Classy Turkey Burgers
Prep Time: 5 minutes
Cook Time: 10-20 minutes
Ingredients (serves 4)
- canola oil
- 1 pound 93% lean ground turkey
- 3 scallions, thinly sliced
- 1 clove of garlic, minced
- 2 Tablespoons Dijon mustard
- 1 whole egg
- coarse sea salt and cracked black pepper
- 4 sandwich rolls
Instructions
1. Lightly oil grilling grate with canola oil. Heat grill to high. In medium bowl combine turkey, garlic, Dijon mustard, and egg. Form into four one inch thick patties. Season with salt and pepper.
2. Place patties on grill grates and cook approximately 5-10 minutes per side, depending on grill temperature. Final cooking temperature should read 165 degrees Fahrenheit.
3. Remove turkey patties from grill and serve on a sandwich roll.
4. Add toppings as desired.
